Mallorca restaurant receives Michelin recognition for dish, one of only eleven in the world

The selected dish, 'Ramallet y mahonés', pays tribute to Balearic produce by reinterpreting ramallet tomato and mahonés cheese

VORO, the acclaimed two-Michelin-star restaurant set in the Cap Vermell Grand Hotel on Mallorca, has once again garnered international recognition. The Michelin Guide has named chef Álvaro Salazar's signature dish, 'Ramallet y mahonés', as one of only eleven standout dishes worldwide, reinforcing Mallorca's position within elite global gastronomy.

This latest accolade follows a thorough evaluation process, with Michelin inspectors sampling an average of 270 restaurants annually. As the Guide explains, these dishes represent those that "remained in memory long after the final bite", underscoring both memorable flavours and technical mastery. VORO stands as one of only two Spanish restaurants included, underlining its relevance within national fine dining.

The selected dish, 'Ramallet y mahonés', pays tribute to Balearic produce by reinterpreting ramallet tomato and mahonés cheese. Chef Salazar achieves a blend of technical innovation and local tradition, bringing together memory and contemporary culinary approaches. This approach to regional ingredients has proven a hallmark of VORO's kitchen discipline and commitment to excellence.

Double Michelin achievement in one edition

VORO is not only the sole bi-starred restaurant in the Balearics, but also the only Spanish establishment appearing in both the best dishes and best desserts shortlists of the Michelin Guide. Such dual distinction is unprecedented nationally, giving further weight to VORO's current prominence on the gastronomy stage.

Toni Mir, CEO of Cap Vermell Group, noted that this Michelin distinction is "not just a gastronomic prize, but confirmation of a way of working. Nothing happens by chance. Behind it is talent, but above all discipline, perseverance, respect for the product and a healthy obsession with excellence that is lived every day, even when no one is looking." Mir went on to thank Michelin for "valuing a project born of the territory and commitment to detail" and stressed that "visible milestones only exist due to invisible and constant effort. This is the achievement of the kitchen, front of house, admin, maintenance, reception, every department that makes up VORO and, naturally, our guests who trust and return. Recognition comes when purpose is clear, and when it arrives, it's celebrated together."

The Cap Vermell Grand Hotel in Canyamel, itself awarded a Michelin Key in October in Paris, is now regarded among Spain's premier accommodations. The integration of high-end hospitality with creative cuisine has positioned Cap Vermell as a standout in Mediterranean luxury tourism.

Balearic culinary excellence on the world stage

This latest global recognition not only secures VORO's reputation within Spanish haute cuisine but also highlights Mallorca's contribution to modern gastronomy. By sensitively reimagining local culinary traditions, VORO affirms that Balearic products and techniques can compete at the highest international level.
