The selection process followed strict criteria, focusing on three main categories: establishments continuing their legacy across generations whilst maintaining original recipes, businesses that have united local communities to revive at-risk culinary traditions, and newer ventures actively working to preserve Mallorcan gastronomy. The map includes key dates, distinguishing between the establishment's original founding and current management when applicable.
Notable entries include Celler Can Ripoll in Inca, established in 1768, making it one of the island's oldest establishments. Other significant venues include Es Guix (1970) in Escorca and Los Patos (1970) in Muro. In Palma, Celler Sa Premsa (1958) stands as an essential reference. The list extends to Mesón Ca'n Torrat (1960) in Calvia and Molí de Ca'n Pere (1960) in Llucmajor.
