Cel Blau Burgers, a family-run restaurant in Palma, Balearics, founded in 1984, is one of 15 finalists competing for the title of Spain’s best burger at the VI edition of the Spanish Burger Championship. The restaurant will present its entry, the "Malamadre", a burger combining Latin American flavours with premium Spanish ingredients. The "Malamadre" burger showcases Cel Blau Burgers’ culinary evolution over four decades. It features dry-aged Rubia Gallega beef, smoked gouda and cheddar cheeses, chimichurri mayonnaise, bacon and bone marrow jam with cracklings, Peruvian ají amarillo sauce, and tajín powder, all served on a potato roll. According to the restaurant, "this burger represents what our establishment has become. A Latin American proposal with our Spanish product creates an incredible combination of flavours."
The venue is located at Calle Llaüt 40 in Palma. Its schedule adapts to local demand: open for dinner only on Mondays from 19:30 to 22:30; Thursday to Sunday it serves lunch from 13:00 to 15:30 and dinner from 19:30 to 22:30. The VI Spanish Burger Championship has solidified its position as the leading burger event in Spain. Organisers highlight its role in shifting burgers from a mere food trend to "a new cornerstone evolving street food into revolution food." This year saw 430 participating establishments inspected by over 180 specialists nationwide.
The evaluation combined customer ratings on the platform www.lamejorhamburguesa.com between 29 January and 1 March, alongside technical assessments by the professional inspectors who visited the entrants. This dual system ensured both public opinion and expert judgement influenced the selection of finalists.
The final judging panel will conduct a blind tasting of the 15 finalist burgers on 10 March, followed by an awards ceremony at El Puerto del Escondite to announce Spain’s best burger of 2026. Entries come from across Spain’s autonomous communities, reflecting the nationwide growth of gourmet burger culture.
