The rise of specialty coffee in Mallorca has established itself as a remarkable gastronomic trend in the Balearic capital. This phenomenon, which transforms coffee consumption into a "drinking experience", has found fertile ground on the island, following in the footsteps of markets like Scandinavia, the United States, Australia, and the United Kingdom. The quality of the bean and expert preparation are pillars of this proposition.
The concept of specialty coffee, first coined in the Tea and Coffee Trade Journal in the 1970s, has redefined the perception of coffee globally. Far from being merely a basic consumer product, it has transformed into a complete sensory experience. The emergence of more sophisticated spaces, along with the professionalisation of baristas, has been key to this evolution. These experts not only prepare the beverage but guide consumers through the unique characteristics of each bean, its origin and nuances, elevating the act of drinking coffee to a ritual appreciated by an increasingly demanding and knowledgeable audience.
In these select coffee establishments, the offering goes beyond the cup. The environment plays a fundamental role, seeking a balance between a welcoming and functional space, often accompanied by carefully selected background music that contributes to the atmosphere. The gastronomic offering has gained weight, including breakfasts, homemade sweets, and vegan options that complement the perfect beverage. It's important to note that, due to the superior quality of the beans and their distribution in reduced quantities, the price of these products is, logically, higher than in traditional cafés.
New coffee propositions
The growth of speciality coffee in Mallorca is evident in the steady arrival of new venues that broaden the island’s offering and appeal to an ever-wider audience. These openings not only increase the number of establishments but also introduce fresh concepts and distinctive experiences to the Balearic capital.

In the Santa Catalina neighbourhood, Orígenes has arrived with a menu centred on high-end coffees, brunch dishes and homemade pastries. This ambitious project aims not only to serve high-quality coffee but also to promote coffee culture and foster professional development in the sector.
Berlin-based brand The Barn has opened its second café in Palma, this time on La Rambla. The spacious venue features a sunny terrace where visitors can enjoy freshly roasted beans. One of the newest additions to Mallorca’s speciality coffee landscape is Reverb, located on Travessa d’en Ballester. This distinctive venue doubles as a premium coffee shop and bicycle workshop, creating a unique meeting point for cycling enthusiasts and coffee lovers alike, and fostering a community built around two shared passions.
The phenomenon of Specialty Coffee
The term 'specialty coffee' refers to coffee beans of the highest quality, grown in ideal conditions and processed with extreme care. Unlike commercial coffee, specialty coffee is evaluated using a Specialty Coffee Association (SCA) scoring system, where only beans that exceed 80 points out of 100 are classified as such. This process implies complete traceability from seed to cup, ensuring sustainable and ethical cultivation practices, as well as expert roasting and preparation.
In Spain, this movement has experienced exponential growth in the last decade, going from being a curiosity to a consolidated trend in major cities and, notably, in tourist destinations like Mallorca. The Balearic island, with its influx of international visitors and a local population increasingly interested in quality gastronomy, has proven to be fertile ground for the development of this coffee culture.
The proliferation of specialty cafés not only responds to a demand for superior products but also to the search for spaces with their own identity and a more conscious consumption experience. Baristas, central figures in this ecosystem, not only master extraction techniques but also act as coffee ambassadors, educating consumers about origins, flavour profiles, and preparation methods. This holistic approach has transformed the act of drinking coffee into a cultural and sensory experience, contributing significantly to the tourist and gastronomic offering of Mallorca.
